Let’s prepare my fattened duck magret
In the pan:
1 • Using a very sharp knife, make some crossed notches. Homogeneously season the magret to taste (salt, pepper, herbs…)
2 • Place the magret skin side down in a large pan and continue cooking for 4 min.
3 • Take excess fat off and return the magret to the pan for about 4 min.
4 • Remove from the pan and keep warm.

In the oven:
1 • Preheat oven to 210 °C (thermostat 7).
2 • Put the magret (skin side up) into the hot oven for 10 min.
3 • Turn the magret over and cook for another 6 min.
4 • Remove from the oven and keep it warm.
